I’ve been pretty dedicated with keeping my carbs down and tracking my macros for the past few days. I’m still learning about what works best for me and have made a few mistakes, but overall, I’m pleased with the results.
I’m down to 222 from my starting weight of 241. I’m still just getting started, so I have a long way to go, and expect it will take me more than a year to reach my final goal.
One thing that definitely makes sense is preparing your own food. You have to control all of the ingredients, and you can’t do that eating out. Last Saturday I made an omelet and without thinking about it, I added some onion. It was a sweet Vidalia onion, and I later found out that it was packed with carbs. Lesson learned.
I still try to limit over-eating, and keeping my daily calorie intake down, but I’m not as concerned about that as keeping my carbs at around 20 grams a day. I’ve also been keeping an 8-hour window for intake, so I have 16 hours a day with fasting. It took a little getting used to, but I’m okay with it now.
I made some “fried” cube steak that turned out really well. I used pork rinds and almond flour for the breading, and cooked it in the air fryer with a spritz of olive oil. We had it with cauliflower and Alfredo sauce, and it was fantastic, with only a few carbs. Guilt free!
